Ingredients
- Dry Ingredients:
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- Wet Ingredients:
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/4 cup stevia or sweetener of choice
- Optional Extras:
- 1/2 cup blueberries
- 1/4 cup walnuts, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with a non-stick spray.
- In a large mixing bowl, combine all dry ingredients: whole wheat flour, almond flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the wet ingredients: unsweetened applesauce, almond milk, eggs, melted coconut oil, vanilla extract, and sweetener.
- Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
- Fold in the optional extras like blueberries and walnuts, if using.
- Fill each muffin cup 3/4 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- Enjoy these muffins fresh or store them in an airtight container for up to three days.
